【摘 要】对我国食品安全现状及存在问题进行了综述，并对其产生原因进行了分析；同时对保障我国食品安全的良性发展提出了相应对策。提出的食品安全良性发展对策对食品安全生产管理具有一定的参考和借鉴价值。
【关键词】食品安全；现状；原因分析；发展对策；HACCP
“民以食为天，食以安为先”，食品安全是一个遍及全球的公共卫生问题,不仅直接关系人类的健康生存，而且还严重影响着经济和社会的发展[1] 。
近年食品安全事件频频发生。日本的大肠杆菌O157流行事件，涉及44个地区，病人逾万人；英国的疯牛病事件，引起整个欧洲乃至世界的恐慌；二恶英事件使数十个国家禁止从比利时、荷

都是由致病性细菌引起的,如常见的沙门氏菌、金黄色葡萄球菌、肉毒杆菌及致病性大肠杆菌和单增李斯特菌等。真菌***污染。真菌广泛存在于自然界中,其产生的***致病性强,随时都有可能污染食品,如常见的霉变花生、大豆、谷物等易检出黄曲霉***Ｂ1。2001年在我国广东省发生的“毒大米”事件，就是真菌***的典型案例。病毒性污染，如甲型肝炎病毒（HAV）、诺沃克病毒（SRSV）、疯牛病病毒（BSE）和口蹄疫病毒（FMD）等。
（二）农药及其它化学物质污染
随着环保意识的提高和环境污染的控制,重金属污染问题正在逐步得到改善。近年来困扰食品安全的化学污染物主要来自农药和其它化学物质。
